My Cuisine
People are what they eat and eat what they are. This is my cuisine, the inheritance of my people and the highest point of what it means to me as a way of life and almost a religion.
It’s difficult to describe what’s not supposed to be defined, or even understood, but only enjoyed and lived. My goals are only simplicity, respect for our products and the pleasure of watching the face of a guest who has enjoyed a meal and maybe remembered, just for a while, past times, their childhood perhaps...
Nevertheless, for those who don’t know Fontequeiroso and mean to come and visit us, I can tell you some rules that define my way of cooking. These are my personal principles:
Breakfast
We offer our delicious breakfasts to start the day in the best way:
No Hurry, #slowfood
Traditional toast with jam, butter, olive oil, home-baked cakes, seasonal fruit.
Galician cheese, cold meat, hot dishes (Spanish omelette, crepes, etc).
Coffee, tea, milk, chocolate, etc.
Dinner
After you have enjoyed our surroundings all day long, we offer you the possibility to try our dinners made with local products and our savoir-faire inspired by traditional cuisine.
We only cook for our guests on demand. Let us know before your check-in that you are interested in having dinner with us.

- My cuisine has an identity. We use local products as much as possible.
- Galician meat from our family farm predominates.
- My cuisine means innovation and recreation but without neglecting the past.
- On my table, organic and eco-friendly ingredients are always present.
- Fish and seafood represent the Costa da Morte (The Death Coast) in my dishes.
- Quality and quantity.
- Respect for seasonal products.
- Use of traditional recipes such as empanadas made with corn flour.
- After-dinner conversation and Galician liquors are part of my philosophy.
- Local traditions and feasts, such as the Galician Entroido (Carnival), need to be present in my dishes.
